When talking about the gourmet cuisine of this region, we can't forget dishes made from Istrian oxen, known as "boškarin." Until about sixty years ago, they were used for farming and fieldwork, but today they are the main ingredient in top Istrian gastronomy. Over the past fifteen years, local authorities and local residents have saved them from extinction.

The white truffle is considered one of the best in the world and should be tasted from September to December, eaten raw, while the black truffle grows all winter and is recommended to be briefly cooked before serving. Istria can boast the discovery of the largest truffle ever found, weighing 1.3kg, discovered by Giancarlo Zigante.

Traditionally, cracklings are prepared by cooking pieces of bacon and fatty meat in a metal kettle. During cooking, the fat melts and drains, while small pieces of meat and fat become crispy and dry. At the beginning of cooking, milk is poured into the kettle, giving the cracklings a golden color.
